Greek Salad with Quinoa

1 cup quinoa
2 cups chopped cucumber
1 chopped onion
1/2 cup kalamata olives
1/4 cup olive oil
2 Tablespoons vinegar

Mix all ingredients together. Enjoy!

Soy Sauce Alternative

2 tsp molasses
4 tsp balsamic vinegar
1/2 tsp garlic powder
1 1/2 cup vegetable broth

Chickpea, Peas and Cauliflower Stew

1 can of chickpeas
1 cup green peas
1/2 head of cauliflower
garlic powder
2 Tbs hummus
1/2 Tbs turmeric

Sautee the onions in 1 cup water
Steam cauliflower
Combine cauliflower, chickpeas, onion, garlic powder, hummus and turmeric. Stir together until well mixed. 
Serve with rice or enjoy on it's own!
